Tonight was.. CHILI!
I made just a simple mild chili.. so that everyone eats.. if I made it 'hot' only 2 eat it.. I don't like the 'spicy heartburn' later Tongue

Hubby is working late, so I am eating solo tonight...

Making a black bean quesadilla--black beans, sauteed onions and a bit of salsa mixed together, on a whole wheat tortilla with cheese of course!  Dry-grilled nice and crispy, with a bit of sour cream to dip it in...and about 2cups of steamed veggies to go with it (brocolli, cauliflower, snow peas and carrots).

All accompanied by some white wine--its Friday, after all!!

Tonight we are going to have a seafood pasta, and when I say seafood, I mean seafood.  The way hubby cooks, there is more shrimp, scallops and squid in it than you can shake a stick at. LOL

Basic recipe involves browning onions until golden, add veggies to you liking (peppers, eggplant, mushrooms) fry for a little longer until the veggies get soft.  Remove them from the pan, reheat, add a little butter then add seafood and some crushed garlic.  Fry for a few minutes, then add veggies back along with some vegetable stock and white wine.  Cook for another few minutes.  Finally stir up some water and cornstarch, add to thicken sauce.  Serve over your favorite noodles.

Delicious and different every time, depending on what we have in the fridge at the time.
