I am looking for.. like  the BEST eggplant parmesan recipe you have!
I had this once.. and have no idea of who made it so I don't know how to track down her recipe Sad
I loved it and want to make it myself...  Cheesy

I confess I don't cook much with eggplant, so I am not much help here Sad  But I love it when other people do!! LOL

On New Years Eve when we went to a friends, they made a FANTASTIC Eggplant/Proscutto Canelloni...with a feta/basil filling...omg I am drooling thinking about it!

This is easy.
you need an eggplant not to fat. fat ones usually have alot of seeds.
flour
egg beaten
italian flavored breadcrumbs
oil any kind i prefer olive oil
red gravy aka tomato sauce
mozzerella or provolone cheese
and parmesan,  loccatelli is the best

cover the bottom of  a frying pan with oil over med heat
slice the eggplant in 1/4 inch slices
dredge in flour then the egg then the breadcrumbs if you love crust dredge in egg and breadcrumbs a second time
you should test the oil first by placing the edge of one of the slices in it. if it sizzles its ready if not then wait or turn up the heat a little
place in oil and fry for about three min each side until the crust is golden.  
eggplant absorbs oil quick so you don't want it to stay in it to long
you may have to add more oil if you are frying alot of eggplant

pour some of the gravy on the bottom of a roasting pan place the fried eggplant over top pour more gravy over the eggplant and then mozzerella or provolone. bake in the oven for about twenty min on 350
sprinkle with parmesan and woola you have some kick butt eggplant parm.

Great! this 1 sounds good.. most that I was finding even online, said to roast the eggplant slices.. and I have tried a few different recipes by doing it that way.. but it comes out mushy.. I never gave it a thought to try and fry it first.. like I do when I make zucchini lasagna!  Who woulda thunk!  :lol:
